Cahier’s White and Calico cats teamed up to pay a visit to Chez Pauline, a French restaurant that just started a new mini-site. It’s a chic bistro where you can taste genuine, traditional French food like a ham and parsley terrine, rabbit terrine, escargot, and foie gras… Something that has become increasingly rare these days. A restaurant interior with a calm sense of chic.
This is what we call bistro chic!
Flower petals decorate a pure white tablecloth.
This area has a great many Japanese restaurants lining the streets, and is quite familiar to Japanese people traveling in Paris. As far as metro stations, it’s nearest to the Pyramid or Quatre Septembre.
Chez Pauline is on Rue Villedo, one of the streets that cross the road commonly referred to as “Japanese Street”, Rue Sainte-Anne.
The small roof tiles give it such a Parisian appearance. As soon as you see it you’ll feel like they must have been here for years.
The current chef is the restaurant’s second, and since his father has been managing the place since 1974 it’s definitely a well-established place.
The interior will also make you feel like you’re back in Paris’s good old days. Even during the day it is dimly illuminated inside.
The bar counter polished to a shine and the tables decorated with flowers don’t have the feel of today's modern restaurants, but it’s certainly got the atmosphere of Paris!
Well then, let’s get to the food!
   
The appetizers are cut up and served
right in front of you by a garcon.
Jellied Ham and Parsley Terrine. Jellied Rabbit Compote, Onion and White Wine Terrine.
First, the appetizer. These are their two famous terrines. It really seems like the restaurants where you can get this kind of delicious jellied food have been gradually disappearing over the years.
Definitely. But since this is a standard recipe of classic French cuisine, you’ll certainly want to try it at least once when you come to France!
The saltiness of the Ham and Parsley Terrine and the elegant flavor of the Rabbit and White Wine Terrine are both a delicacy. And the acidity of the cornichon (pickles) garnish really works with it and increases the deliciousness.
The entree is another of Chez Pauline’s famed dishes, Beef Bourguignon.
This dish from the Bourgogne (Burgundy) region of France is made by slowly boiling the beef with the area’s specialty red wine.
The meat is so tender! It's so soft that you can really tell it took a lot of time and effort to make it.
As it enters your mouth, the flavor is accompanied by just the faintest scent of red wine.

With Gnocchi

With modern French cuisine you can add newer ingredients and spices and decide which you'd like to include, but with this kind of classic recipe everyone will know immediately whether you’ve done it well or not so it’s really a difficult undertaking.
That’s true. It’s really got a profound flavor that can only come from carefully reproducing a recipe passed down through the family.
   
Desert is another classic: fondant au chocolat.
It’s this really soft, rich chocolate cake that is just to die for.
And some ice cream goes with it perfectly!
Even people who don’t really like chocolate should really try some French chocolate cake. You may just be surprised and end up devouring it.

This was a pretty luxurious report to file. White and Calico are pretty satisfied with themselves. It may be just a little expensive, but for those people who want to taste some reliable, classic French food at least once while they’re in France, this is definitely the restaurant we recommend. These flavors aren't flashy and they haven't changed in generations, and that's why they'll drive home the feeling that you're really in France.
And since it faces a quiet little lane, we recommend the terrace seating in the summer. It’s less than a ten minute walk from the department store area with Galeries Lafayette and Printemps, so when you can’t decide what restaurant you want to have lunch or dinner at, just head to Chez Pauline!
